This easy, creamy Cucumber Salad with vegan sour cream is made of simple whole ingredients and ready in less than 15 minutes! It’s a vegan version of Concombres à la crème salad. Although, I will share how to make homemade vegan sour cream.

EASY CUCUMBER SALAD INGREDIENTS
Cucumbers
Salt
Vegan sour cream: store bought or homemade
Lemon juice
HOW TO MAKE VEGAN SOUR CREAM
To make vegan sour cream you will need: cashews, lemon juice, water and apple cider vinegar.
- Soak cashews overnight.
- The next day, drain cashews, add to blender.
- Blend cashews with water, apple cider vinegar and lemon juice, until smooth.
HOW TO MAKE CUCUMBER SALAD
- Peel the cucumbers and cut. Add to a mixing bowl and sprinkle salt over them. Leave the cucumbers in the refrigerator for 30 minutes.
- Remove the cucumbers from the refrigerator, place in a colander and rinse off under water. Leave to dry on a paper towel.
- Make a sauce by stirring sour cream, salt, pepper and lemon juice (optional).
