These Potato Gratin is a simple vegan dish, made with mushrooms, potatoes and vegan béchamel sauce. It is a perfect main dish, very hearty and delicious!

HOW TO MAKE VEGAN BÉCHAMEL SAUCE
- Heat vegan butter in a saucepan.
- Stir in the flour and cook for a minute.
- Add the hot milk (whisking constantly).
- Continue to cook until the sauce has thickened.
- Add salt and pepper to taste.
HOW TO MAKE POTATO GRATIN
- Preheat the oven 365F.
- Peel the potatoes and slice in thin rounds (you can use knife, peeler or mandolin).
- Arrange potato layer on the bottom of a baking dish.
- Pour a layer of béchamel sauce.
- Grate vegan cheese on the top and follow with mushrooms and mushroom powder.
- Repeat layers.
- Bake 30-40 minutes until fully cooked.
POTATO GRATIN TIPS
- Cut potatoes as thin as possible
- To make mushroom powder: grind with a coffee grinder dry mushrooms (you can use these powder for sauces, risotto or pasta)

- 2 cup plant-based milk

- 1/2 cup mushrooms
- 1/4 cup vegan cheese
- mushroom powder
- bechamel sauce
Instructions
- Preheat the oven 365F.
