Today I would like to share a chocolate chai madeleines recipe! Yes, chocolate, chai and cookies, what can be better for a fall season! These cookies are vegan version of classic french madeleines with a twist of fresh chai spices and dutch cacao, very moist and DELICIOUS ❤
CHOCOLATE CHAI MADELEINES INGREDIENTS:
Butter: you could use vegan butter (for vegan version) or canola oil.
Flour: all purpose flour, gluten-free flour or pastry flour.
Sugar: cane sugar or maple (agave) syrup.
Cacao powder: dutch processed powder (I found that such processed cacao in these recipe will give you more intense brown chocolate color).

What is a Madeleine?
Madeleine is a shell-shape small sponge cake from two communes of the Lorraine region in northeastern France.
How do you keep madeleines from sticking?
Slightly grease the pan with oil and sprinkle with flour.
When the first recipe of madeleines was created?
The term madeleine appear for the first time in the middle of the 18th century!
Chocolate Chai Madeleines
Ingredients
- 70 g butter (vegan or canola oil)
- 80 g flour
- 1/2 tsp baking powder
- 70 g cane sugar
- 1/4 cup buttermilk store bought or homemade
- 1 tsp cacao powder
- 1 tsp chai spices
White chocolate glaze
- 100 g white chocolate
Instructions
- Preheat the oven
- Sift flour, baking powder and sugar
- Add chai spices
- In separate bowl, combine butter and buttermilk
- Fold butter and flour mixtures
- Add cacao to 2 tbsp of the mixture
- Divide mixture among the moulds (top it with cacao mixture and draw swirls)
- Bake for 10-15min 365F
- Cool on a wire rack
- Glaze with white chocolate
