VEGAN PANETTONE

VEGAN PANETTONE INGREDIENTS 

Flour: all-purpose or bread flour 

Yeast: instant yeast

Sugar: cane sugar 

Vegan egg 

Plant milk 

Vegan butter 

Dried fruit: you could use raisins, sultanas, currants and candied orange peels (recipe for homemade candied orange peel could be found in these post)

Zest: orange and lemon 

Nuts: pine nuts (optional)

HOW TO MAKE PANETTONE 

  1. Mix the flour, yeast, sugar, salt and vanilla in a bowl. 
  2. Make a well in the center and stir plant milk and vegan egg. 
  3. Add vegan butter.
  4. In a separate bowl, combine dried fruits, zest and nuts (if using). 
  5. Add fruit mixture to the rest of the ingredients and mix (the dough would be sticky but don’t worry). 
  6. Cover the dough and leave to rest in warm place for two hours. 
  7. Preheat the oven 365F. 
  8. Place the dough in prepared pan and bake 30- 40min until golden brown and the panettone center checked with cake tester or “toothpick test” (baking time may vary depending on the pan size and stove).  
  9. Remove from the oven. Leave to cool.
