Dried fruits and orange zest make un unbeatable combination, and the addition of nuts only heightens the appeal. For a fancier finish, dust Vegan Panettone with confectioner's sugar.

Ingredients
 
 

  • 4 cups flour
  • 2 envelops instant yeast (7g each envelop)
  • 2 vegan eggs
  • 2/3 cup plant milk
  • 1/2 cup cane sugar
  • 1 tsp vanilla extract
  • 4 oz vegan butter
  • 1/2 cup dried fruits
  • 1/4 cup nuts (optional)
  • 1 orange zest
  • 1 lemon zest

Instructions
 

  • Mix the flour, yeast, sugar, salt and vanilla in a bowl. Make a well in the center and stir plant milk and vegan egg. Add vegan butter.
  • In a separate bowl, combine dried fruits, zest and nuts (if using). Add fruit mixture to the rest of the ingredients and mix (the dough would be sticky but don't worry). 
  • Cover the dough and leave to rest in warm place for two hours. 
  • Preheat the oven 365F. Place the dough in prepared pan and bake 30- 40min until golden brown and the panettone center checked with cake tester or "toothpick test" (baking time may vary depending on the pan size and stove).  
  • Remove from the oven. Leave to cool.
