EASY VEGAN MEATBALLS

These Easy Vegan Meatballs are tender, yet firm enough to hold up in sauce. Simple dish made of cupboards ingredients: rice, chickpeas, spices and condiments. You can season as you like and easy transform it into a meatloaf.

VEGAN MEATBALLS INGREDIENTS 

Rice: jasmine rice 

Chickpeas 

Tomato sauce: homemade tomato sauce recipe could be found here 

Nutritional yeast 

Oats

Nuts: pecans or walnuts 

Onion 

Garlic 

Dried thyme and sage 

Soy sauce 

Dijon mustard 

Salt and pepper 

Breadcrumbs 

HOW TO MAKE VEGAN MEATBALLS 

  1. Heat a skillet over a medium heat and cook onions and garlic. 
  2. Put oats and nuts into a food processor and pulse until the are finely minced. Add chickpeas, onion and garlic, and pulse until they mixed together. 
  3. Add the rice and mix well. Mix in tomato sauce, soy sauce, nutritional yeast, dijon mustard and dried herbs. 
  4. Form the mixture into a meatballs using a ice cream scoop.
  5. Sprinkle breadcrumbs on the top. 
  6. Bake 20-25 minutes (365F) until browned.
