BARLEY PILAF

Warm up on cold days with Barley pilaf flavors. Beluga lentils put a kick of nutty flavor into this dish, while barley has a pleasantly chewy texture and sweet flavor.

VEGAN PILAF INGREDIENTS 

Barley 

Beluga lentils 

Onion: yellow sweet onion 

Tomatoes 

Garlic 

Vegetable broth 

Spices: dried thyme, dried oregano, ground turmeric. 

HOW TO MAKE PILAF 

  1. Soak barley for 30 minutes. Rinse and drain. 
  2. Rinse and drain lentils. 
  3. In a frying pan, warm the oil. Add the onion, garlic and cook for 5 minutes. Add tomatoes and cook for 3 minutes.
  4. Add the thyme, oregano, and turmeric. 
  5. In a baking dish add barley, lentils, fried onion mixture and vegetable broth. 
  6. Cover the dish with cooking foil and transfer to the oven. 
  7. Bake for 1 1/2 hours (365F), stirring halfway through and uncovering the foil, util all of the liquid is absorbed.
