Warm up on cold days with Barley pilaf flavors. Beluga lentils put a kick of nutty flavor into this dish, while barley has a pleasantly chewy texture and sweet flavor.

Ingredients
 
 

  • 1 cup barley
  • 1 cup beluga lentils
  • 1/4 bulb onion
  • 1 clove garlic
  • 4 small tomatoes
  • 3 1/2 cup vegetable broth
  • 1/2 tsp dried thyme
  • 1/2 tsp dried oregano
  • 1/4 tsp turmeric
  • 1 pinch black pepper
  • 1 pinch salt

Instructions
 

  • Soak barley for 30 minutes. Rinse and drain. 
  • Rinse and drain lentils. 
  • In a frying pan, warm the oil. Add the onion, garlic and cook for 5 minutes. Add tomatoes and cook for 3 minutes.Add the thyme, oregano, and turmeric.
  •  In a baking dish add barley, lentils, fried onion mixture and vegetable broth. Cover the dish with cooking foil and transfer to the oven. 
  • Bake for 1 1/2 hours (365F), stirring halfway through and uncovering the foil, util all of the liquid is absorbed.
