RATATOUILLE PIE

This savory, fragrant Ratatouille Pie makes excellent cool-weather fare and is the perfect lunch or dinner meal. It also just as tasty when served chilled. Use a homemade ratatouille for the pie filling and serve with green salad on the side.

Flour 

Olive Oil 

Grape seed oil

HOW TO MAKE VEGAN RATATOUILLE PIE 

  1. Sift the flour into a bowl. 
  2. Pour olive oil and grape seed oil over the flour.
  3. Mix well. 
  4. Add water and salt. 
  5. Knead until you have a smooth dough.
  6. Cover the dough with plastic wrap and chill for 2 hours. 
  7. Roll out the dough (1/8inch) and cut into two discs. 
  8. Fill the pie shell with ratatouille. Damp the edges of the pie shell. 
  9. Lay the other dough disc on top . Cut away the excess dough. 
  10. Brush the top with vegan egg wash (recipe for vegan egg wash could be found here).

  • 4 cups flour

  • 4 tbsp olive oil
  • 1/2 cup water
  • 2 pinches salt

  • 1 lb ratatouille (prepared)

Instructions

  • Sift the flour into a bowl. Pour olive oil and grape seed oil over the flour.Mix well. 
  • Add water and salt. Knead until you have a smooth dough.
  • Cover the dough with plastic wrap and chill for 2 hours. 
  • Roll out the dough (1/8inch) and cut into two discs. Fill the pie shell with ratatouille. Damp the edges of the pie shell. 
  • Lay the other dough disc on top . Cut away the excess dough. Brush the top with vegan egg wash. 
  • Bake for 30-40 minutes (365F).
