EASY VICHYSSOISE SOUP

Vichyssoise is traditionally a cold potato soup, but this light vegan version includes zucchini and coconut cream and can be served cold or hot.

VEGAN VICHYSSOISE INGREDIENTS 

Potato: russet potato 

Leek

Zucchini 

Coconut cream 

Vegan butter 

Vegetable broth 

Salt and pepper (to taste)

HOW TO MAKE EASY VICHYSSOISE

  1. In a pot, melt the butter over a medium heat.
  2. Add chopped potatoes, leek and zucchini, stirring occasionally for 5 minutes.
  3. Add the broth and bring to a boil.
  4. Reduce the heat and simmer for 20 minutes. Let cool slightly.
  5. Puree the soup in a blender. Return to the pot. Add coconut cream and simmer over a low heat for 2-3 minutes. 
  6. Season with salt and pepper.

Easy Vichyssoise soup

  • 1 leek
  • 2 medium russet potato
  • 1 medium zucchini
  • 3 cups vegetable broth
  • 1/2 cup coconut cream
  • salt and pepper
