PUMPKIN CHOCOLATE CHIP COOKIES

An ideal vegan treat, these cookies are also welcome sight for anyone who craves pumpkin and chocolate. For a more intense flavor, add chai spices (recipe could be found here) into cookies dough.

VEGAN PUMPKIN CHOCOLATE CHIP COOKIES INGREDIENTS 

Flour: all-purpose flour 

Baking powder 

Vegan butter 

Icing sugar 

Vegan egg 

Cane sugar 

Pumpkin puree: homemade puree (recipe could be found here). 

HOW TO MAKE PUMPKIN COOKIES 

  1. Place the vegan butter in a bowl and mix with cane sugar. Add icing sugar.
  2. Add vegan egg and mix. 
  3. Add the flour, baking powder and salt. Mix well. 
  4. Add pumpkin puree and chocolate chips. 
  5. Lay a sheet of cling film on work surface and place the dough on top. 
  6. Wrap the dough and roll into a log. Refrigerate overnight. 
  7. The next day, preheat the oven 365F.
  8. Remove the cling film and use the knife to cut the cookies dough into rounds. 
  9. Bake cookies for 15-20 minutes (365F) until ready.
