HOW TO MAKE VEGAN PUMPKIN CHOWDER 

  1. Pre-cook pumpkin (how to cut, peel and cook pumpkin recipe could be found here). 
  2. Add olive oil to a heavy pot over a medium heat. 
  3. Add Onion, celery, sage, salt and pepper. Cook for 5 minutes. 
  4. Stir in potatoes, cover and cook for 5 minutes.
  5. Add vegetable broth. Reduce the heat and cook for 15 minutes.
  6. Working in batches, puree pumpkin in a blender. 
  7. Pour to the pot with the rest of the ingredients and simmer for 5 minutes. Season with salt and pepper.

Ingredients

  • 2 lb pumpkin
  • 1/2 bulb onion
  • 1 stalk celery
  • 2 potatoes
  • 1/2 tsp fresh sage
  • 4 cups vegetable broth

Instructions

  • Pre-cook pumpkin
  • Add olive oil to a heavy pot over a medium heat. Add Onion, celery, sage, salt and pepper. Cook for 5 minutes.  
  • Stir in potatoes, cover and cook for 5 minutes.Add vegetable broth. Reduce the heat and cook for 15 minutes.
  • Working in batches, puree pumpkin in a blender. Pour to the pot and simmer for 5 minutes with the rest of ingredeints. Season with salt and pepper.
