Inspired by France’s most beloved and classic dish, this Ratatouille soup features eggplants, peppers, tomatoes and basil.

Zucchini

HOW TO MAKE RATATOUILLE SOUP 

  1. In a pot, warm olive oil. Add garlic, onion and saute for 3 minutes.
  2. Add the zucchini, eggplant, bell pepper and cook for 10 minutes.
  3. Add the tomatoes, reduce heat and simmer for 15 minutes.
  4. Add the vegetable broth and cook for 5-10 minutes. Season with salt and pepper to taste. Blend before serving.
