HOW TO MAKE HOT WATER CRUST PASTRY

  1. In a mixing bowl whisk flour and salt.
  2. In medium pot, bring the water to boil and add butter. Stir until butter melted.
  3. Pour the hot water-butter mixture into the flour. Start mixing with a fork. It should form a ball.
  4. Knead the dough with your hands (it should be still warm).
  5. Wrap the bowl and let the dough rest for 30 minutes.

HOT WATER CRUST PASTRY PASTY FILLING

For the pasty filling you could use combination of vegetables: potatoes, onions, garlic, carrots, peas and corn. You could add tofu, mushrooms or seitan.

To make vegan pasty:

  1. Roll out the dough and cut out.
  2. Place the filling in the center.
  3. Brush each pastry with vegan “egg-wash” (recipes for egg wash could be found in these post).
  4. Bake 25-20 minutes (365F) until golden brown.

You could bake a pie with a hot water pastry using a springform cake tin because the dough might be fragile once baked.
