MANDARIN UPSIDE-DOWN CAKE INGREDIENTS 

Flour: all-purpose flour 

Cane sugar 

Vegan butter 

Vegan egg 

Baking powder 

Corn syrup 

Mandarins 

HOW TO MAKE VEGAN UPSIDE-DOWN CAKE 

  1. Preheat the oven. Brush the cake pan with vegan butter and sprinkle with cane sugar. 
  2. In a mixing bowl, combine vegan butter, cane sugar and corn syrup. 
  3. Add vegan egg. 
  4. Zest 2 mandarines. Stir the zest into a batter. Squeeze mandarines and stir juice into the batter. 
  5. Add flour and baking powder.
  6. Peel the remaining mandarines and cut crosswise into slices (1/2 inch thick). 
  7. Arrange mandarin slices in the pan and pour the batter. 
  8. Bake for 25-30 minutes (365F). 
  9. Let the cake cool to room temperature in the pan, then turn out.
