HOW TO MAKE VEGAN CELERY SOUP
- In a large pot, add olive oil and onion. Saute for 5 minutes.
- Add vegetable broth, celery, celery root and chestnuts. Cover and let it simmer for 30 minutes.
- Remove from the heat and let cool slightly.
- Puree the soup in a blender.
- Transfer to a pot. Add vegan cream and let it simmer for 5 minutes.
- Garnish with croutons.
