CELERY AND CHESTNUT SOUP

Celery root is the root of a variety of celery plant. Serve this hearty soup as a starter or main course, garnished with warm croutons.

HOW TO MAKE VEGAN CELERY SOUP 

  1. In a large pot, add olive oil and onion. Saute for 5 minutes.
  2. Add vegetable broth, celery, celery root and chestnuts. Cover and let it simmer for 30 minutes. 
  3. Remove from the heat and let cool slightly. 
  4. Puree the soup in a blender. 
  5. Transfer to a pot. Add vegan cream and let it simmer for 5 minutes. 
  6. Garnish with croutons.

  • 1/2 bulb onion (chopped)
  • 2 ribs celery (chopped)
  • 1 celery root (chopped)
  • 1/2 cup chestnuts (vacuumed)
  • 5 cups vegetable broth
  • 1/2 cup vegan cream

Instructions

  • In a large pot, add olive oil and onion. Saute for 5 minutes.
