Celery root is the root of a variety of celery plant. Serve this hearty soup as a starter or main course, garnished with warm croutons.

- 1/2 bulb onion (chopped)
- 2 ribs celery (chopped)
- 1 celery root (chopped)
- 1/2 cup chestnuts (vacuumed)
- 5 cups vegetable broth
- 1/2 cup vegan cream
In a large pot, add olive oil and onion. Saute for 5 minutes.
Add vegetable broth, celery, celery root and chestnuts. Cover and let it simmer for 30 minutes.
Remove from the heat and let cool slightly.
Puree the soup in a blender.
Transfer to a pot. Add vegan cream and let it simmer for 5 minutes.
Garnish with croutons.
