HEALTHY BARLEY SOUP INGREDIENTS 

Pearl barley

Mushrooms: dried 

Yellow sweet onion 

Potatoes 

Vegetable broth 

White vine (optional) 

Olive oil 

HOW TO MAKE BARLEY SOUP 

  1. Soak mushrooms for 30 minutes in water. Drain and chop. 
  2. In a separate bowl soak pearl barley for 30 minutes in water.
  3. Wash, clean and chop potatoes. 
  4. In a large pot, warm the oil. Add chopped onion. Saute for 5 minutes. 
  5. Add chopped mushrooms. Saute for 5 minutes. 
  6. Add white vine (optional). Saute for 10 minutes. 
  7. Add vegetable broth, barley and mushrooms. 
  8. Cover and simmer for 20 minutes. 
  9. Remove from heat and let cool slightly. Season with salt and pepper.

Ingredients

  • 1 cup pearl barley
  • 1/4 cup mushrooms (dry)
  • 1/2 bulb onion
  • 2 tbsp white vine (optional)
  • 4 cups vegetable broth
  • 2 medium potatoes
  • 1 tbsp olive oil

Instructions

  • Soak mushrooms for 30 minutes in water. Drain and chop.
  • In a separate bowl soak pearl barley for 30 minutes in water.
