RED LENTIL SOUP

Red lentils cook more quickly than other varieties which makes it ideal ingredient for soups. You can also add fried onion to each serving, if you like.

Red lentils

HOW TO MAKE RED LENTIL SOUP

  1. In a large pot, add olive oil, onion, garlic and saute for 5 minutes.
  2. Add lentil, carrot (chopped), parsley (chopped) and broth.
  3. Season with salt and pepper. Bring to a boil, reduce the heat, cover and cook for 20 minutes.
  4. Remove from heat. Add vegan cream. Serve. Garnish it with fried onion (optional).
