GOLDEN GAZPACHO INGREDIENTS

Pepper: yellow bell pepper

Tomatoes: yellow tomatoes

Cucumber

Onion: yellow sweet onion

Garlic

Fresh water

HOW TO MAKE GOLDEN GAZPACHO 

  1. Peel tomatoes, garlic and onion.
  2. Peel the cucumber, cut lengthwise and scoop out seeds.
  3. Remove seeds from pepper.
  4. Finely chop all the vegetables.
  5. Add prepared vegetables to a blender, add water, pepper and salt.
  6. Blend on a high speed for 3-5 minutes.
  7. When done, add olive oil and vinegar.
  8. Chill gazpacho for 2-3 hours in the refrigerator before serving.
