Golden Gazpacho

1 yellow bell pepper 1 3/4 lb yellow tomatoes 1/2 bulb yellow sweet onion 2 clove garlic 1 cucumber 2 cups fresh water 2 tbsp olive oil 1 tbsp vinegar salt and pepper
Peel tomatoes, garlic and onion.
Peel the cucumber, cut lengthwise and scoop out seeds.
Remove seeds from pepper.
Finely chop all the vegetables.Add prepared vegetables to a blender, add water, pepper and salt.Blend on a high speed for 3-5 minutes.
When done, add olive oil and vinegar.
Chill gazpacho for 2-3 hours in the refrigerator before serving.
