EDAMAME SALAD

This Edamame Salad is simple salad made with edamame, corn, tomatoes, avocado and drizzled with French salad dressing.

EDAMAME HEALTH BENEFITS 

Edamame (immature soybeans) is a vegetable-type soybean. It’s high in protein. Rich in vitamins and minerals (source). 

HOW TO COOK EDAMAME 

  1. Bring a saucepan of water to a boil.
  2. Add frozen shelled edamame. 
  3. Cook for 3 minutes. 
  4. Transfer to the bowl of ice water. 
  5. Drain, pat dry.

EDAMAME SALAD INGREDIENTS 

Edamame: frozen shelled edamame

Tomatoes 

Corn: fresh or frozen 

Avocado 

HOW TO MAKE EDAMAME SALAD 

  1. In a large serving bowl add cooked edamame, corn, halved tomatoes and avocado. 
  2. Drizzle with a French salad dressing (recipe for the dressing could be found in this post).
