HOW TO MAKE VEGAN MANGO MUFFINS

For these recipe you will need a fresh mango, vegan egg, flour, vegan buttermilk (homemade vegan buttermilk recipe could be found in these post) and flour.

  1. Pell the mango and cut into small pieces.
  2. Whisk together sugar and vegan egg. Add salt.
  3. Add vegan buttermilk. Whisk in the flour and baking powder (how to make homemade baking powder could be found in these post).
  4. Melt vegan butter and add to the batter.
  5. Add the diced mango and chocolate chips.

Ingredients

  • 1 mango
  • 1/2 cup cane sugar
  • 2 vegan eggs
  • 1/2 cup buttermilk
  • 1/4 tsp salt
  • 1 cup flour
  • 1 tsp baking powder
  • 1/4 cup vegan butter (melted)
  • 3 tbsp choclate chips

Instructions

  • Pell the mango and cut into small pieces.
  • Preheat the oven.
  • Whisk together sugar and vegan egg. Add salt.
  • Add vegan buttermilk. Whisk in the flour and baking powder.
  • Melt vegan butter and add to the batter.Add the diced mango and chocolate chips. 
  • Bake for 25 minutes (365F).
