VEGAN COFFEE CAKE

Coffee cake is a pound cake layered with a brown sugar and cinnamon streusel. These recipe is a vegan version of a delicious coffee cake, perfect addition to your morning coffee or afternoon tea.

 

WHAT IS STREUSEL

Streusel is a crumbly topping used on top of breads and muffins. There is many different variations of it. It is one of the key ingredient of a coffee cake.

VEGAN COFFEE CAKE INGREDIENTS 

Flour: use all-purpose, pastry, type 00 or gluten-free flours.

Sugar: cane sugar.

Butter: canola oil or vegan butter.

Brown sugar: you can use brown sugar or coconut sugar. Coconut sugar will give you a little crunchier texture.

Cinnamon: popular spice loaded with lots of antioxidants (source).

Ingredients

Cake

  • 1 cup flour
  • 1/4 cup cane sugar
  • 1/2 tsp baking powder
  • 1/2 cup buttermilk
  • 1/4 cup canola oil
  • 1/4 tsp salt
  • 1 tsp vanilla

Topping

  • 1 cup flour
  • 1/3 cup brown sugar (or coconut sugar)
  • 2 tsp cinnamon
  • 1/4 cup canola oil
  • 1/4 tsp salt

Instructions

Cake

  • Preheat the oven.
  • In a large bowl whisk together flour, sugar, baking powder and salt.
  • In a separate bowl whisk oil, buttermilk and vanilla.
  • Pour the wet mixture into the dry.

Topping

  • In a large bowl combine together flour, sugar, cinnamon and salt. Add oil and toss utill it appears crumbly.
  • Fill the pan with batter and sprinkle crumb topping.
  • Bake 365F 25-30min.
