VEGAN MASCARPONE INGREDIENTS 

Cashews

Lemon juice

Water Salt

Coconut cream: canned, 20% fat 

Maple syrup

HOW TO MAKE VEGAN MASCARPONE 

  1. Soak cashews overnight or boil for 20 minutes and drain.
  2. Combine the cashews, salt, lemon juice and 1/2 cup of water in the blender. 
  3. Pulse a few times. Add more water and blend until the mixture looks like wet oatmeal. 
  4. Add coconut cream and maple syrup. 
  5. Blend until smooth (don’t overblend). Your mascarpone is ready to eat.
