Ingredients
 
 

  • 2 cups cashews
  • 1/4 tsp salt
  • 1 tsp lemon juice
  • 1 cup water
  • 1/4 cup coconut cream
  • 2 tbsp maple syrup

Instructions
 

  • Soak cashews overnight or boil for 20 minutes and drain.
  • Combine the cashews, salt, lemon juice and 1/2 cup of water in the blender. Pulse a few times. Add more water and blend until the mixture looks like wet oatmeal. 
  • Add coconut cream and maple syrup. 
  • Blend until smooth (don't overblend). Your mascarpone is ready to eat.
