HOW TO MAKE QUICK PUFF PASTRY 

To make vegan quick puff pastry you will need:

Flour: all-purpose flour 

Butter: vegan butter 

Water: cold water

Salt 

  1. In a mixing bowl, add the flour and vegan butter. Mix it using a dough (pastry) blender. 
  2. Dissolve the salt in the cold water. Pour the water to a mixing bowl. 
  3. Mix the dough with pastry blender. 
  4. On a lightly floured work surface press the dough into a rectangular. 
  5. Roll it out into a rectangular. Dust the pastry and work surface with the flour. 
  6. Fold the upper third (shorter side should facing you) then the lower third toward the middle.
  7. Roll the pastry up in a log. Tap the edges to make a square shape.
  8. Wrap the dough and refrigerate for 2 hours. 

HOW TO MAKE PASTRY BITES 

  1. Roll the pastry out. Cut out into six disks. Place them on a baking sheet lined with parchment paper. 
  2. Cut out six more discs, then cut out the centers to create a ring. 
  3. Brush the pastry with “egg wash” (recipe could be found here), then place one ring on top of each disk. Glaze with “egg wash” the whole pastry. Refrigerate the pastry for 30 minutes.  
  4. Bake for 20-30 minutes (365F).
  5. Cook vegan Bechamel.
  6. Cook mushrooms. Remove the stems from the mushrooms and cut into squares. 
  7. In a saucepan mix vegan Bechamel sauce with mushroom squares. Adjust seasoning (salt and pepper). 
  8. Using a knife, pull off the little pastry caps from the middle of the pastry without piercing the middle. 
  9. Full the shells with creamy mushroom filling. Reheat in the oven for 5 minutes.
