Water: ice water 

Cane sugar

HOW TO MAKE VEGAN GALETTE DOUGH 

  1. In a mixing bowl, add the flour, salt, sugar. 
  2. Add cutter into pieces butter. Knead the mixture for 2-3 minutes.
  3. Sprinkle the water over the flour mixture, then knead the dough for 5 minutes until mixture comes together. 
  4. Refrigerate the dough for 30 minutes. 

HOW TO MAKE GALETTE 

  1. Using the large holes on a grater-shredder, shred the potatoes and apples into a colander. 
  2. Press out any excess liquid, and then transfer to a bowl.Stir flour and cornstarch.
  3. Add fried onion and garlic.
  4. On a lightly floured work surface, roll out the dough 3-4 mm thick. 
  5. Spread potato-apple mixture into a circle in the center of the dough leaving border of dough uncovered along the edge.
  6. Fold the edge of the dough up and over the mixture, leaving the galette uncovered in the center. 
  7. Place chestnuts on the top of the mixture. 
  8. Sprinkle vegan cheese on the top. 
  9. Refrigerate the galette for 30 minutes. 
  10. Bake 365F for 35-40 minutes.

Ingredients

Dough

  • 1 1/4 cup flour
  • 6 tbsp vegan butter
  • 5 tbsp water
  • 1 tsp cane sugar
  • 1 pinch salt

Galette Filling

  • 2 medium potatoes

  • 1/4 bulb onion
  • 2 cloves garlic
  • 1 tbsp flour
  • 1 tsp cornstarch
  • 1 tbsp vegan cheese
  • salt and pepper
