Potato, apple and chestnut galette

Ingredients
 
 

Dough

  • 1 1/4 cup flour
  • 6 tbsp vegan butter
  • 5 tbsp water
  • 1 tsp cane sugar
  • 1 pinch salt

Galette Filling

  • 2 medium potatoes
  • 1 apple
  • 1/4 bulb onion
  • 2 cloves garlic
  • 1 tbsp flour
  • 1 tsp cornstarch
  • 1 tbsp vegan cheese
  • salt and pepper

Instructions
 

  • Using the large holes on a grater-shredder, shred the potatoes and apples into a colander. Press out any excess liquid, and then transfer to a bowl.Stir flour and cornstarch. Add fried onion and garlic
  • On a lightly floured work surface, roll out the dough 3-4 mm thick. Spread potato-apple mixture into a circle in the center of the dough leaving border of dough uncovered along the edge.
  • Fold the edge of the dough up and over the mixture, leaving the galette uncovered in the center. Place chestnuts on the top of the mixture. 
  • Sprinkle vegan cheese on the top. 
  • Refrigerate the galette for 30 minutes. 
  • Bake 365F for 35-40 minutes.
