WHAT IS DUMP CAKE?

Dump Cake- a cake where filling is toped with a boxed cake mix and butter, then baked. For this Cherry Dump Cake we will use a simple homemade vegan cake mix, which you could keep in your cupboard and with addition of other basic ingredients, you can make a simple cake in minutes.

To make this cake we will need two ingredients: cherry pie filling and vegan cake mix.

HOMEMADE VEGAN CAKE MIX

CAKE MIX INGREDIENTS

Almond flour

Icing sugar

Flour

Dry vegan egg whites (optional) 

Baking powder: homemade baking powder recipe could be found in this post

Salt  

 

HOW TO MAKE VEGAN BOXED CAKE MIX 

  1. In a large mixing bowl, add all the ingredients. Whisk together to combine.
  2. Scoop the mixture into airtight jar and store until needed.

CHERRY PIE FILLING INGREDIENTS 

Cherry: fresh, pitted cherries 

Cane sugar 

Salt 

Corn starch 

HOW TO MAKE EASY CHERRY DUMP CAKE 

  1. In a large bowl, toss the cherries with cane sugar, salt and corn starch. Set aside. 
  2. Preheat the oven.
  3. Lightly grease the baking tin.
  4. In a large mixing bowl, add cake mix, vegan egg (if came mix made without vegan egg white powder), plant milk and vegan butter (melted). 
  5. Spread cherries into an even layer. 
  6. Pour the batter over the cherries. 
  7. Bake 20-30 minutes (365F) until the edge of the cake are starting to brown.

  • 2/3 cup plant milk
  • 1 tsp vanila extarct
