HOW TO MAKE POTATO LEEK SOUP

  1. Peel, wash and dice potatoes and leek.
  2. In a large saucepan melt the butter, add leeks and cook over a low heat until they have softened. Pour in boiling water, add potatoes.
  3. Cook for 20 minutes.
  4. Stir in cream, add pepper and cook for additional 5 minutes.
  5. Once ready, blend everything together with a blender.
