STRAWBERRY COOKIES

These Strawberry cookies are perfect vegan treat with strawberry flavor and aroma.

VEGAN STRAWBERRY COOKIES INGREDIENTS 

Dough: 

Flour: all-purpose flour or pastry flour 

Vegan butter 

Water 

Cane sugar

Vanilla sugar 

Salt

Filling: 

Strawberries: fresh or frozen 

Apple juice 

Cane sugar 

Cornstarch 

Almond extract

HOW TO MAKE STRAWBERRY COOKIES 

Dough: 

  1. In a large mixing bowl add the flour; make a well in the center and put in vegan butter(room temperature), cane sugar, vanilla sugar and pinch of salt. 
  2. Working with the tips of the fingers, rub the flour and ingredients together until the mixture forms particles the size of pea. 
  3. Add water (1tbsp at a time). Mix it into the mixture to form a dough. Do not knead. 
  4. Wrap in plastic and refrigerate for 30minutes. 

Strawberry filling: 

  1. In a saucepan, combine strawberries and cane sugar. Bring to a boil. 
  2. In a small bowl, stir apple juice, almond extract and cornstarch. 
  3. Stir cornstarch mixture into strawberries. Cook for 5 minutes (the mixture should become glossy).
