HOW TO MAKE PEACH AND THYME CUPCAKES 

  1. Whisk together sugar and vegan egg. Add salt.
  2. Add vegan buttermilk. Whisk in the baking powder and flour.
  3. Add melted vegan butter, peach (chopped), chocolate chips and fresh thyme.
  4. Bake 25-30 minutes (365F) until ready.

Ingredients

  • 1 cup flour
  • 1 tsp baking powder
  • 1/2 cup vegan buttermilk
  • 1/2 cup cane sugar
  • 2 vegan eggs
  • 1/4 cup vegan butter
  • 1/4 tsp salt
  • 2 peaches
  • fresh thyme
  • 3 tbsp chocolate chips (optional)

Instructions

  • Pell peaches and cut into small pieces.
  • Preheat the oven.
  • Whisk together sugar and vegan egg. Add salt.
  • Add vegan buttermilk. Whisk in the flour and baking powder.
  • Melt vegan butter and add to the batter.Add the diced peaches, fresh thyme and chocolate chips. Bake for 25 minutes (365F).
