BEET SOUP

This aromatic and hearty Beet Soup (or Potage Polonais) makes a great lunch or dinner meal. This delicate soup comes together very easy.

BEET SOUP INGREDIENTS 

Green cabbage

Carrots 

Celery 

Onion

Tomatoes 

Leek

Potatoes 

Beet 

Vegetable broth powder

Water 

HOW TO MAKE VEGAN BEET SOUP 

  1. Melt vegan butter, add the onion and garlic. Simmer for 5 minutes.
  2. Peel and cut tomatoes. Add tomatoes to onion mixture.
  3. Add carrots, celery, leeks and cabbage. Cover and simmer for 15 minutes.
  4. Add vegetable broth powder and water. Cook over a low heat for 1 hour.
  5. Peel, rinse and dice the potatoes. Add potatoes to the soup and simmer for 30 minutes.
  6. Peel and dice beet, add to the soup and cook for 10 minutes.

  • 2 carrots
  • 3 stalks celery
  • 1 leek
  • 9 oz green cabbage
  • 1 onion
  • 2 medium tomatoes
  • 2 cloves garlic
  • 1 tbsp vegan butter
  • 3 medium potatoes
  • 1 beet
  • 1 tbsp vegetable broth powder
  • 2 quarts water

Instructions

  • Melt vegan butter, add the onion and garlic. Simmer for 5 minutes.
