Ingredients
 
 

  • 2 carrots
  • 3 stalks celery
  • 1 leek
  • 9 oz green cabbage
  • 1 onion
  • 2 medium tomatoes
  • 2 cloves garlic
  • 1 tbsp vegan butter
  • 3 medium potatoes
  • 1 beet
  • 1 tbsp vegetable broth powder
  • 2 quarts water

Instructions
 

  • Melt vegan butter, add the onion and garlic. Simmer for 5 minutes.
  • Peel and cut tomatoes. Add tomatoes to onion mixture.
  • Add carrots, celery, leeks and cabbage. Cover and simmer for 15 minutes.
  • Add vegetable broth powder and water. Cook over a low heat for 1 hour.
  • Peel, rinse and dice the potatoes. Add potatoes to the soup and simmer for 30 minutes.
  • Peel and dice beet, add to the soup and cook for 10 minutes.
