- 2 carrots
- 3 stalks celery
- 1 leek
- 9 oz green cabbage
- 1 onion
- 2 medium tomatoes
- 2 cloves garlic
- 1 tbsp vegan butter
- 3 medium potatoes
- 1 beet
- 1 tbsp vegetable broth powder
- 2 quarts water
Melt vegan butter, add the onion and garlic. Simmer for 5 minutes.
Peel and cut tomatoes. Add tomatoes to onion mixture.
Add carrots, celery, leeks and cabbage. Cover and simmer for 15 minutes.
Add vegetable broth powder and water. Cook over a low heat for 1 hour.
Peel, rinse and dice the potatoes. Add potatoes to the soup and simmer for 30 minutes.
Peel and dice beet, add to the soup and cook for 10 minutes.
