These oatmeal cookies is gluten-free and made with quick oats and almond flour.

HOW TO MAKE OATMEAL COOKIES

  1. In a mixing bowl, stir together oats, almond flour, baking powder, coconut, coconut sugar and salt.
  2. Add raisins and pecans (optional).
  3. Beat aquafaba to soft peaks, add peanut butter and coconut oil.
  4. Add wet ingredients to dry ingredients and mix until combined.
  5. Preheat the oven 365F.
  6. Form cookies on a baking sheet.
  7. Bake 10-15 minutes until golden brown.
