POTATO ROSEMARY SOUP

POTATO ROSEMARY SOUP INGREDIENTS 

Vegetable broth

Potatoes

Rosemary  

Coconut milk (full fat/canned)

Onion 

Olive oil 

Bay leaf 

Salt and pepper 

HOW TO MAKE POTATO ROSEMARY SOUP 

  1. In a large pot, warm the oil over medium heat.
  2. Add onion and sauce until translucent.
  3. Pour in the broth and bring to a boil. Add the potatoes, rosemary and the bay leaf.
  4. Cover partially, reduce the heat to low, and simmer for 15-20 minutes.
  5. Remove the pot from the heat and discard the bay leaf.
  6. Puree the soup with a blender or immersion blender.
  7. Bring the soup to a simmer. Add coconut milk. Season with salt and pepper and serve.

  • 1 lb potatoes
  • 1 tbsp olive oil
  • 1 tsp rosemary
  • 1 bay leaf
