CUCUMBER SALAD

This easy, creamy Cucumber Salad with vegan sour cream is made of simple whole ingredients and ready in less than 15 minutes! It’s a vegan version of Concombres à la crème salad. Although, I will share how to make homemade vegan sour cream.

EASY CUCUMBER SALAD INGREDIENTS 

Cucumbers

Salt

Vegan sour cream: store bought or homemade

Lemon juice

HOW TO MAKE VEGAN SOUR CREAM 

To make vegan sour cream you will need: cashews, lemon juice, water and apple cider vinegar. 

  1. Soak cashews overnight. 
  2. The next day, drain cashews, add to blender. 
  3. Blend cashews with water, apple cider vinegar and lemon juice, until smooth.

HOW TO MAKE CUCUMBER SALAD 

  1. Peel the cucumbers and cut. Add to a mixing bowl and sprinkle salt over them. Leave the cucumbers in the refrigerator for 30 minutes.
  2. Remove the cucumbers from the refrigerator, place in a colander and rinse off under water. Leave to dry on a paper towel. 
  3. Make a sauce by stirring sour cream, salt, pepper and lemon juice (optional).

Instructions
