ECLAIR MEANING

Eclair is a pastry made with chop dough filled with a cream and topped with icing.

WHAT IS CHOUX PASTRY

Pâte à choux (or choux pastry) is a pastry made from water, butter, flour and eggs (traditionally).

HOW TO MAKE VEGAN ECLAIRS

  1. In a medium saucepan, combine water, milk, butter, sugar and salt.
  2. Bring it to a full boil.
  3. Add the sifted flour and immediately whisk vigorously so that the mixture comes together.
  4. Place the pan back on medium heat, and cook (stirring) for about 1 minute.
  5. Remove the mixture from the heat. Add vegan eggs.
  6. Beat the mixture with a mixer (adding vegan eggs 1 tbsp at a time).
  7. Transfer your dough to a pastry bag. Pipe the 3-inch strips onto a sheet lined with a parchment paper.
  8. Bake 400F for 10-12 minutes (depending on the oven).
  9. Remove from the oven and allow to cool.

Ingredients

Eclairs

  • 1/2 cup milk (plant-based)
  • 1/2 cup water
  • 7 tbsp vegan butter
  • 1 tsp sugar
  • 1/4 tsp salt
  • 1 cup flour
  • yellow food coloring

Vegan Egg

  • 1/4 cup aquafaba
  • 3 tsp corn starch
  • 1 tsp baking powder
  • 1/4 tsp xantham gum

Glaze

  • 100 g chocolate chip
  • 20 g vegan butter
  • 1 tbsp water

Instructions

  • In a medium saucepan, combine water, milk, butter, sugar and salt.
  • Bring it to a full boil. Take off from the heat.
  • Add the sifted flour and immediately whisk vigorously so that the mixture comes together.
  • Place the pan back on medium heat, and cook (stirring) for about 1 minute. Remove the mixture from the heat.
  • Add vegan eggs. Beat the mixture with a mixer (adding vegan eggs 1 tbsp at a time).
