In a medium saucepan, combine water, milk, butter, sugar and salt.
Bring it to a full boil. Take off from the heat.
Add the sifted flour and immediately whisk vigorously so that the mixture comes together.
Place the pan back on medium heat, and cook (stirring) for about 1 minute. Remove the mixture from the heat.
Add vegan eggs. Beat the mixture with a mixer (adding vegan eggs 1 tbsp at a time).
Transfer your dough to a pastry bag. Pipe the 3-inch strips onto a sheet lined with a parchment paper.
Bake 400F for 10-12 minutes (depending on the oven).
Remove from the oven and allow to cool.
Once cooled. Melt chocolate with vegan butter and water.
Glaze with the chocolate each eclair.
