HOW TO MAKE VEGAN CREAM OF ASPARAGUS SOUP
- Bring the water and salt to boil.
- Add peeled asparagus (with a vegetable peeler), onion and parsley. Boil for 20 minutes (low heat).
- Lift out all the vegetables, leaving only the liquid.
- Discard onion and parsley.
- Simmer the liquid, add cornstarch (mix 1 tbsp of cornstarch with 2 tbsp of water).
- Boil for 5 minutes. Lover the heat, add coconut milk, vegan butter (optional) and cooked asparagus, salt and pepper.
- Cook for 5 minutes.

- 7 springs fresh parsley
- 700 ml water
- 1/4 bulb onion
- 1 tbsp cornstarch
- 1 tbsp water
- 100 ml coconut milk
- 1 tsp vegan butter
- salt
- pepper
Instructions
