These recipe for quick and delicious tabbouleh salad with couscous- easy to make, vegan and full of nutrition.

Ingredients
- 1 cup couscous
- 1/3 cucumber
- 1/3 cup tomatoes
- 1/3 cup olives
- 1/4 bulb onion
- 1/4 cup mint
- 1/4 cup parsley
Dressing
- 3 tbsp grapeseed oil
- 3 tbsp lemon juice
- 1 pinch salt and pepper
Instructions
- Prepare the couscous: put coucous into a large bowl and pour boiling water. Leave it for 5 min.
- To make the dressing, mix grapeseed oil, lemon juice, salt and pepper.
- Using a frok, fluff up couscous and add chopped onion, cucumber, tomatoes,chopped parsley and mint. Mix to combine.
- Serve in a dish with olives on the top.
