Vegan Tahini Cookies

Rich with tahini and chocolate, this vegan cookies are hit at any dessert table. They are delicious eaten slightly warm, but they also make a wholesome lunch box treat.

Ingredients
 
 

  • 1 cup flour
  • 2 tbsp cosnstarch
  • 1/4 cup coconut milk
  • 1 pinch salt
  • 1 vegan egg
  • 1/2 cup tahini
  • 1/2 cup cane sugar
  • 1/4 cup chocolate chips

Instructions
 

  • In a mixing bowl, whisk together the flour, baking powder, cornstarch and salt. 
  • In a separate bowl, add tahini, coconut oil and cane sugar. Mix with a hand mixer until smooth. 
  • Add coconut milk and vegan egg. 
  • Add the flour mixture and beat until just mixed. Scoop out the cookies into the baking sheet.  Sprinkle with sesame seeds (optional).
  •  Bake for 15-20 minutes (365) until browned.
