Ingredients
 
 

French Lentils

  • 1 cup french lentls cooked
  • 1 cup sweet corn cooked
  • 5 pcs grape tomatoes
  • 1/4 bulb sweet onion
  • 1 tbsp chopped parsley
  • 5 pcs olive
  • 1/3 cup vegan cheese
  • 1 tbsp olive oil
  • 2 tbsp lemon juice
  • 1 pinch salt
  • 1 pinch black pepper

Beets

  • 1 cup peas cooked
  • 2 pcs beats cooked
  • 1/4 bulb sweet onion
  • 2 tbsp vegan mayonnaise

Instructions
 

French Lentls

  • Place the lentils, corn, tomatoes, onion, parsley in a large bowl.
  • Whisk togehter olive oil and lemon juice.
  • Toss the dressing over lentils mixture. Add vegan cheese on the top.

Beets

  • Mix together beets, peas, onion and mayonnaise.
  • To assemble, arrange asparagus (prior cook in boling water for 5-7min) in a crisscross pattern and fill in with lentils and beets parts.
