1 can full-fat coconut milk 1 cup cashews 1 1/4 cup water 1/4 cup cane sugar 2 tbsp instant coffee
Dissolve 2 tbsp of instant coffee in the water.
Combine the cashews and water in a blender and process until creamy.
Add coconut milk and cane sugar and blend.
Chill until very cold, then pour it into your ice cream maker and process according to the manufacturer's instructions.
