In a mixing bowl combine aqufaba and cream of tartar. Mix with a electric hand mixer. Raise the speed to high and beat until the mixture form firm peaks. Add 1 tbsp cane sugar and beat for 3 minutes, then sprinkle remains 2 tbsp sugar and beat for 3 minutes.
Drizzle the melted chocolate over the mixture. Gently fold using a rubber spatula. Transfer to jars and refrigerate for 30 minutes.
