This Strudel combines smooth flavor of apples and cinnamon. Add sliced almonds and rum extract (optional) to the filling to really take it over the top.

Ingredients
 
 

Dough

  • 2 1/3 cup flour
  • 2/3 cup water
  • 1 vegan egg
  • 1 tbsp grape seed oil (plus more for the dough)
  • 1 pinch salt and pepper
  • 2 tbsp vegan butter (melted)

Filling

  • 1 lb apples
  • 3 tbsp cane sugar
  • 3 tbsp almonds
  • 3 tbsp raisins
  • 1 tbsp cinnamon

Instructions
 

Dough

  • Sift the flour. Add vegan egg, water, salt and 1 tbsp grape seed oil. Knead the dough. Shape into a ball and place in a bowl. Pour grape seed oil over the dough and let stand for 10 minutes. Discard the oil. Wrap the bowl and refrigerate overnight. 

Filling

  • The next day, peel, core and slice apples. Add cane sugar, almonds, raisins and cinnamon.
  • On a lightly floured work surface roll out the dough (as thin as possible). Brush the dough with melted vegan butter. Pour apple filling on one side of the dough (on the shorter side). Roll up the strudel tightly. Bake for 20 minutes (365F). Take out the strudel from the oven. Spoon juice from the strudel on top of it.Bake additional 20-30 minutes until lightly browned.
