This classic Plum Tart captures the affinity between fresh plums and vegan streusel. Plums hold their shape well in the oven, which makes them ideal for tucking into a pastry crust. You can toss them with sugar-cinnamon mixture or let them shine on their own.

Vegan Streusel 4 tbsp vegan butter 1/2 cup flour 3/4 cup almond flour 1/3 cup cane sugar 1/2 tsp cinnamon Plum Tart 2 pounds plums 1/4 cup cane sugar 1/2 tsp cinnamon
Preheat the oven 365F.
Pre-bake tart shell (with pie weights) for 20 minutes.
Wash the plums and dry them (air dry for 30 minutes).
Sprinkle the baked streusel on the bottom of the pre-baked tart shell.
Arrange plum quarters in the pastry shell all the way atound.
Mix cinnamon with the cane sugar in a bowl and sprinkle hald of the mixture on the plums.
Bake 365F for 35-45 minutes until crust is baked crisp.
Remove from the oven and once cool, sprinkle on the remaining sugar mixture.
