Onion Marmalade

Onion Marmalade is lightly sweet and sour in taste, with a refreshing thyme aroma. This marmalade is served for an appetizer, but it would also make a satisfying addition to any main dish.

Ingredients
 
 

  • 2 large sweet yellow onion
  • 2 tbsp cane sugar
  • 2 tbsp red wine vinegar
  • 2 tbsp balsamic vinegar
  • 1 tbsp honey
  • 3 tbsp olive oil
  • 1 tbsp fresh thyme
  • salt and pepper (to taste)

Instructions
 

  • In a frying pan, warm the oil. Add the onions, salt and stir. Cover and cook for 20 minutes (until onion become pale gold).
  • Stir in the sugar, honey, vinegars and fresh thyme.Simmer uncovered for 30 minutes. 
  • Let the mixture to cool completely. 
  • Serve or transfer to airtight container and refrigerate for up to 2 weeks.
