Onion Marmalade
Onion Marmalade is lightly sweet and sour in taste, with a refreshing thyme aroma. This marmalade is served for an appetizer, but it would also make a satisfying addition to any main dish.

2 large sweet yellow onion 2 tbsp cane sugar 2 tbsp red wine vinegar 2 tbsp balsamic vinegar 1 tbsp honey 3 tbsp olive oil 1 tbsp fresh thyme salt and pepper (to taste)
In a frying pan, warm the oil. Add the onions, salt and stir. Cover and cook for 20 minutes (until onion become pale gold).
Stir in the sugar, honey, vinegars and fresh thyme.Simmer uncovered for 30 minutes.
Let the mixture to cool completely.
Serve or transfer to airtight container and refrigerate for up to 2 weeks.
