This Olive oil bread is loaded with orange and vanilla, two deeply rich flavors that work well together. Set it out on a platter alongside tea or coffee in the afternoon.
Make a well in the flour (set 2 tbsp aside) and add water. Sprinkle the yeast on it and 1 tbsp of sugar and 2 tbsp of flour. Leave the mixture in a warm place for 30 minutes.
Mix vegan eggs with salt, vanilla sugar (optional), dried orange peel and remaining sugar. Add the mixture to olive oil. Add olive oil mixture to the flour. Knead the dough. Wrap mixing bowl with a plastic and let the dough rise in warm place (2-3 hrs) and double in size.
Butter a cake or pie pan. Roll out the dough to fit into the pan. Cover the whole bottom of the pan. Slash the top of the bread. Cover and let rise (1 hr).
Brush the bread with vegan egg wash. Bake (375F) for 20-25 minutes.
